 Double Orange Scones with Orange Butter

 

A great change from muffins...
 

 

 

BATTER:

 

2 cups 

 

flour

 

2 ½ tsp 

 

baking powder

 

3 Tbs 

 

sugar

 

1 Tbs 

 

grated orange peel

 

1/3 cup 

 

butter

 

11 oz 

 

canned mandarin oranges, drained

 

¼ cup 

 

milk

 

1 large 

 

egg, beaten

 

1 Tbs 

 

sugar
 

 

 

 

ORANGE BUTTER:

 

¼ cup 

 

butter, softened

 

2 Tbs 

 

orange marmalade

Preheat oven to 400 degrees F. Grease cookie sheet.

Prepare batter: mix flour, baking powder, sugar and orange rind. Cut in butter to form coarse crumbs. Add oranges, milk and egg and then stir until mix leaves sides of bowl and forms sticky dough. Flour hands and knead lightly 10 times.

Place on cookie sheet and pat into 6" circle ¾" thick. Cut into 8 wedges and separate slightly. You may roll out dough on a floured board and cut with a floured biscuit cutter into smaller rounds. You may also sprinkle with one tablespoon of sugar.

Bake for 15-20 minutes or 10-12 minutes if dough was cut into smaller pieces.

Prepare orange butter: mix softened butter and marmalade and place in small serving bowl. Serve with warm scones.
