Preheat oven
to 350°F. Grease bottom only of 9-inch loaf pan. |

In a small
bowl, whisk together flour and baking powder.
Set aside. |

In a large
bowl, beat eggs. Whisk in sugar, eggnog, butter,
and extracts. Whisk in flour mixture and stir
just until moistened. |

Pour into
prepared pan. Bake 45 to 50 minutes or until
toothpick comes out clean. Cool 10 minutes.
Remove from pan to a wire rack; cool completely
before slicing. |

Yield: One loaf
or three mini loaves
Cooking Tips:
If you're making mini loaves, you'll need to eyeball
them until they're finished. Start with setting
the timer for 30 minutes, and then check at additional
3-5 minute intervals until a toothpick tests clean. |
