Eggnog Bread

 

 

Wonderful holiday quick bread...
 

2¼ cups 

 

all-purpose flour

 

2 tsp 

 

baking powder

 

2 large 

 

eggs

 

1 cup 

 

granulated sugar

 

1 cup 

 

dairy eggnog (not light)

 

½ cup 

 

butter, melted

 

¼ tsp 

 

ground nutmeg (fresh will have best flavor)

 

2 tsp 

 

rum extract

 

1 tsp 

 

vanilla extract

Preheat oven to 350°F. Grease bottom only of 9-inch loaf pan.

In a small bowl, whisk together flour and baking powder. Set aside.

In a large bowl, beat eggs. Whisk in sugar, eggnog, butter, and extracts. Whisk in flour mixture and stir just until moistened.

Pour into prepared pan. Bake 45 to 50 minutes or until toothpick comes out clean. Cool 10 minutes. Remove from pan to a wire rack; cool completely before slicing.

 

Yield: One loaf or three mini loaves

Cooking Tips:
 
If you're making mini loaves, you'll need to eyeball them until they're finished.  Start with setting the timer for 30 minutes, and then check at additional 3-5 minute intervals until a toothpick tests clean.
