Pumpkin Apple Streusel Muffins

 

 

Two flavors that blend well together...
 

 

 

STREUSEL TOPPING:

 

½ cup 

 

granulated sugar

 

¼ cup 

 

flour

 

1 tsp 

 

ground cinnamon

 

½ stick 

 

butter
 

 

 

 

MUFFINS:

 

2½ cups 

 

flour

 

2 cups 

 

granulated sugar

 

1 Tbs 

 

pumpkin pie spice

 

1 tsp 

 

baking soda

 

½ tsp 

 

salt

 

1 cup 

 

canned pumpkin

 

1/4 cup 

 

vegetable oil

 

1/4 cup 

 

applesauce

 

2 large 

 

eggs, lightly beaten

 

2 cups 

 

chopped, peeled Golden Delicious apples

Prepare topping: Mix sugar, flour and cinnamon in medium bowl. Cut in butter and blend until crumbly.

Prepare muffins: Preheat oven to 350°F. Grease 18 muffin cups or line with paper liners.

Mix flour, sugar, pumpkin pie spice, baking soda and salt in a bowl using an electric mixer until blended.

Beat pumpkin, oil, applesauce and eggs in a bowl using an electric mixer until blended.

Add flour mixture to pumpkin mixture and mix just until moistened. Fold in apples.

Spoon batter into prepared muffin cups and sprinkle with Streusel Topping. Bake 30-40 minutes or until toothpick inserted in middle of muffin comes out clean.

 

Yield: About 18 muffins
