Strawberry Bread

 

 

Tastes even better the next day...
 

3 cups 

 

flour

 

1 tsp 

 

baking soda

 

1 tsp 

 

salt

 

2 cups 

 

granulated sugar

 

4 large 

 

eggs, well beaten

 

½ cup 

 

canola oil

 

½ cup 

 

unsweetened applesauce

 

Two 10-ounce 

 

packages frozen strawberries, thawed and drained

Preheat oven to 350°F. Grease two loaf pans.

In a large bowl, whisk together flour, soda, salt and sugar.

In a separate bowl, mix eggs and oil. Add liquids to flour mixture. Mix just until moistened. Gently fold in strawberries.

Divide batter into two prepared loaf pans. Bake for 1 hour, or until toothpick inserted in center comes out clean.

 

Yield: Two Loaves
