Anytime Muffins

 

These are delicious any time of day. A great and healthy snack!
 

1 cup 

 

flour

 

1 cup 

 

oat bran

 

2 tsp 

 

baking soda

 

1 tsp 

 

baking powder

 

½ tsp 

 

salt

 

2 tsp 

 

cinnamon

 

1 cup 

 

brown sugar

 

1 cup 

 

chopped pecans or walnuts

 

½ cup 

 

raisins

 

¼ cup 

 

canola oil

 

½ cup 

 

nonfat milk

 

2 large 

 

eggs, lightly beaten

 

1 tsp 

 

vanilla

 

2 large 

 

tart apples, peeled and grated

 

1 ½ cups 

 

grated carrots

Preheat oven to 350 degrees F. Grease muffin tins.

Combine first 6 ingredients in a large bowl. Add brown sugar. Stir in apples and carrots. Add raisins and pecans.

Make a well in the center of the mixture and add oil, eggs, milk and vanilla. Stir just until moistened. Gently stir in carrots and apples.

Scoop batter into muffin tins. Bake 18-20 minutes until nicely browned.
