Apple Blackberry Bread

 

 

Fresh fruit in every bite...
 

1½ cups 

 

flour

 

1 tsp 

 

ground cinnamon

 

½ tsp 

 

baking soda

 

½ tsp 

 

salt

 

¼ tsp 

 

baking powder

 

¼ tsp 

 

ground nutmeg

 

1 large 

 

egg

 

¼ cup 

 

canola oil

 

¼ cup 

 

unsweetened applesauce

 

1 cup 

 

granulated sugar

 

1 cup 

 

finely chopped apple (gala apples recommended)

 

¼ cup 

 

quartered blackberries (slice very carefully)

Preheat oven to 350°F. Grease bottom and halfway up the sides of the loaf pan.

In a medium bowl, whisk together flour, cinnamon, baking soda, salt, baking powder and ground nutmeg. Make a well in the center of the flour mixture; set aside.

In a separate bowl, combine egg, oil, applesauce, sugar and apples. Add wet mixture all at once to flour mixture. Stir just until moistened. Gently fold blackberries into mixture. The batter will be lumpy.

Spoon batter into prepared pan. Bake for 50 - 55 minutes or until toothpick inserted into center comes out clean. Cool in pan for 10 minutes. Remove from pan and let completely cool.

Wrap and store overnight before slicing.

 

Yield: One Loaf
