peeled and chopped apples |

STREUSEL TOPPING: |

Preheat oven
to 350°F. Grease bottom only of 9x5x3-inch loaf
pan. |

In a large
bowl, cream together butter and sugar. Beat in
eggs and vanilla. |

In a
separate bowl, whisk together flour, baking soda
and salt. Add dry ingredients to wet ingredients
a little at a time, alternating with milk. Fold
in apples and nuts (if desired). Sprinkle
streusel on top. |

Bake for 55
minutes or until toothpick inserted in center
comes out clean. |
