Apple Rice Casserole
 

 Apple- Rice Casserole

 

A fruit and rice dish- different and yummy...
 

½ cup 

 

uncooked white rice

 

2 cups 

 

half and half cream

 

1/3 cup 

 

granulated sugar

 

dash of 

 

salt

 

1 tsp 

 

vanilla

 

1 cup 

 

water

 

1 cup 

 

granulated sugar

 

3 Tbs 

 

fresh lemon juice

 

1 tsp 

 

grated lemon rind

 

5 medium 

 

apples, peeled, cored and cut into ½" slices

In a large saucepan, mix rice, cream, salt and 1/3 cup sugar. Mix well and place over medium heat until the cream boils. Stir well and cover. Simmer, covered, over low heat, stirring occasionally for 45 minutes. When all liquid is absorbed, pour into a casserole dish that has been sprayed with nonstick spray.

Mix vanilla, water, 1 cup sugar, lemon juice and rind in the saucepan. Bring to a boil over medium heat. Add apple slices and simmer until apples are just softened. Take apples out of the pan with a slotted spoon and place them on top of the rice.

Boil the remaining syrup in the saucepan until it is reduced to about ½ cup. Pour over the rice/apple mixture.

Top with whipped cream and serve.

 Cooking Tips
