Breakfast Cobbler with Sausage, Apples, Onions and Cheddar

 

Excellent choice for a crowd...
 

 

 

FILLING:

 

1 lb 

 

well-seasoned pork sausage meat

 

3 medium 

 

onions, chopped

 

3 medium 

 

Golden Delicious apples, peeled or not, cored & cut into large chunks
 

 

 

 

BATTER:

 

˝ cup 

 

low fat sour cream

 

2 tsp 

 

vegetable oil

 

1 large 

 

egg

 

˝ cup 

 

yellow cornmeal

 

˝ cup 

 

all-purpose flour

 

1 tsp 

 

baking soda

 

1 tsp 

 

baking powder

 

1 tsp 

 

salt

 

˝ tsp 

 

freshly ground black pepper

 

˝ cup 

 

buttermilk

 

1 cup 

 

grated cheddar cheese (4 ounces)

Prepare filling: Cut sausage into 1˝-inch slices and then into chunks. Sauté sausage in a large skillet over medium heat for about 10 minutes, until it begins to brown. Add onions and apples; sauté until soft and golden, about 5 minutes- set aside (this step can be done a day ahead- just put the filling into the baking pan, cover and refrigerate until you are ready to bake).

Preheat oven to 375°F. (350°F. if using a glass baking pan). Set a rack on the middle level. Spray 9x12 baking pan with nonstick spray. Pour filling into the dish.

Prepare batter: In a large bowl, whisk together sour cream, oil and egg. In a separate bowl, mix dry ingredients together. Add dry ingredients alternately with the buttermilk to the egg mixture, whisking until fully combined. Pour batter evenly over the filling and sprinkle with the cheese.

Bake 25 minutes or until the top is golden brown and the batter is cooked through. Let cool for 5 to 10 minutes before serving.
