with no crust...

Canadian bacon (about 1 oz. each) |

eggs, beaten |

cup |

mayonnaise |

white pepper |
|

|
Parmesan cheese, grated |

ounces |
|
brie
cheese, cubed |

tsp |
|
dried Italian herb seasoning |

Preheat oven
to 375°F. Coat 9-inch pie plate with cooking
spray. |

Place
Canadian bacon slices, slightly overlapping,
around the side and the bottom of prepared pie
plate. Set aside. |

In a medium
bowl, combine eggs, mayonnaise, pepper, Parmesan
cheese, Brie, and Italian seasonings. Pour
mixture into pie plate over bacon. Bake for 30
minutes. |

After 15
minutes of baking, place foil over quiche to
protect it from overcooking and drying out. |
