Twelve 1½" thick |

slices of day-old French bread |

evaporated or whole milk |

granulated sugar |

lemon rind |

Evenly
divide bread slices between two greased 9x13"
glass baking dishes. Set aside. |

In a large
bowl, whisk eggs, milk, sugar, peel, vanilla and
salt. Pour evenly over bread. Let soak for five
minutes. Turn bread over. Cover and chill 12
hours. |

Before
serving, preheat oven to 325° F. In a small
bowl, mix sugar and cinnamon. Sprinkle evenly
over bread. |

Bake,
uncovered, 30-45 minutes. Serve immediately with
powdered sugar, fresh fruit, or syrup. |
