Preheat oven
to 350 degrees F. |

Melt butter
in skillet. Add onions, cover and steam until
onions are soft. Season with salt and pepper.
Drain and arrange onions in baked pie crust.
Sprinkle with cheese. |

Beat eggs,
yolks, cream and nutmeg together and pour into
the shell. |

Bake 30
minutes, or until set and puffy. Let sit for 5
minutes before cutting. |
