 Aioli

 

Delicious with hot or cold fish and meats, as well as cold vegetables...
 

3 large 

 

egg yolks

 

3 - 3½ cups 

 

extra virgin olive oil

 

12 cloves 

 

garlic

 

 

 

salt and lemon juice to taste

In food processor, place egg yolks and olive oil (start with 3 cups and add more if needed). The resulting mixture should be similar to a heavy mayonnaise. Remove from food processor and set aside.

Whirl garlic cloves in the processor with a dollop of the egg/oil mixture and a splash of olive oil. It should form a paste-like mixture. Add the remaining egg/oil mixture and process until well-mixed and smooth.

Add salt and lemon juice to taste.
