 Apricot Marmalade

 

Great for gifts during holiday time...
 

1 lb 

 

dried apricots

 

20 oz 

 

can crushed pineapple

 

1 medium 

 

orange (juice and all grated peel)

 

6 cups 

 

granulated sugar

Soak dried apricots in water overnight.

Cook in the same water until soft; mash thoroughly. Add crushed pineapple, grated rind and juice of orange. Stir in sugar. Cook, stirring frequently, until mixture boils and thickens.

Scoop into jars and refrigerate.

*This is terrific on home baked breads and muffins.
