Grate orange
peel on coarse grater to make long shreds. Peel
orange and cut into ½" cubes, discarding white
pith. |

Wash and
drain cranberries; remove any stems. Chop
cranberries very coarsely (or run through a food
grinder or processor). |

Combine
grated peel, chopped orange, cranberries and
sugar; mix well. Refrigerate until well chilled,
several hours. |

Wash and
core apples, but do not pare. Wrap and
refrigerate. |

When ready
to serve, chop apples coarsely and toss lightly
with cranberry mixture just to combine. |
