 Papaya Cilantro Salsa

 

Great as a topping for fish and poultry...
 

4 medium 

 

papayas, peeled and diced

 

20 oz 

 

can pineapple chunks, diced

 

½ medium 

 

red onion, minced

 

½ cup 

 

minced cilantro

 

½ Tbs 

 

white wine vinegar

 

¼ tsp 

 

crushed red chilies

 

¼ tsp 

 

salt

 

1 Tbs 

 

salt

 

 

Combine all ingredients and mix well. Best if flavors are allowed to blend for several hours in refrigerator before serving.
