 Peach Salsa

 

Fantastic topping for grilled fish, as well as a appetizer on its own with chips...
 

6 large 

 

fresh peaches, peeled and chopped

 

2/3 cup 

 

orange marmalade

 

¼ cup 

 

sliced green onions

 

3½ Tbs 

 

cider vinegar

 

1 oz 

 

crystalized ginger

 

2 tsp 

 

granulated sugar

In a medium bowl, mix all ingredients together.

Cover, and refrigerate until ready to serve.

 

Yield: 2 cups
