 Pear Chutney

 

Delicious to accompany pork or ham...
 

4½ lbs 

 

hard pears

 

½ cup 

 

chopped green bell peppers

 

1 cup 

 

crystallized ginger, diced

 

1½ lbs 

 

seedless raisins

 

4 cups 

 

granulated sugar

 

3 cups 

 

cider vinegar

 

½ tsp 

 

salt

 

½ tsp 

 

ground cinnamon

 

¼ tsp 

 

nutmeg

 

¼ tsp 

 

ground cloves

 

½ tsp 

 

ground allspice

 

6 bay 

 

leaves

 

½ cup

Peel, core and cut pears in small strips. Chop finely.

In medium saucepan, mix pears, peppers, ginger, raisins, sugar, vinegar, and salt and cover with water. Tie spices in cheesecloth and drop into pan with the pear mixture. Simmer until pears are tender and mixture is thick (about 2 hours).

Add Certo; boil hard for 1 minute.

Pack in hot sterilized jars and seal.

 

Yield: 8 half pints
