 Pineapple Salsa

 

A delicious variation of the same old salsa...
 

2 cups 

 

minced fresh pineapple

 

2 medium 

 

cloves garlic, minced

 

3 Tbs 

 

fresh mint, chopped

 

2 Tbs 

 

fresh squeezed lime juice

 

¼ tsp 

 

salt

 

¼ tsp 

 

ground cumin

 

 

 

cayenne pepper, to taste

 

 

Mix all ingredients well. Refrigerate and let flavors blend for at least a couple of hours.

 

Yield: 2 cups

*Terrific as an accompaniment to grilled fish.
