 Tomatillo Salsa

 

The lemon-herb taste of tomatillos make a great flavor in this salsa...
 

1 lb 

 

tomatillos

 

1 medium 

 

onion, peeled and quartered

 

1 jalapeño 

 

pepper, seeded

 

1 clove 

 

garlic

 

3 Tbs 

 

fresh orange juice

 

4 Tbs 

 

fresh lime juice

 

¼ cup 

 

minced fresh cilantro

Remove and discard tomatillo husks; rinse tomatillos well. Place tomatillos in covered pot with boiling salted water, and cook 4-6 minutes, or until very tender. Drain.

Combine onion, jalapeño, and garlic in food processor or blender. Add cooked tomatillos; process until coursely chopped.

Spoon mixture into a boil. Add juices; season with salt to taste. Stir in cilantro. Let stand at least 30 minutes before serving.

Serve immediately at room temperature, or cover and chill for serving later.
