tomatillos |

onion, peeled and quartered |

jalapeño |

pepper, seeded |

fresh orange juice |

Remove and
discard tomatillo husks; rinse tomatillos well.
Place tomatillos in covered pot with boiling
salted water, and cook 4-6 minutes, or until
very tender. Drain. |

Combine
onion, jalapeño, and garlic in food processor or
blender. Add cooked tomatillos; process until
coursely chopped. |

Spoon
mixture into a boil. Add juices; season with
salt to taste. Stir in cilantro. Let stand at
least 30 minutes before serving. |

Serve
immediately at room temperature, or cover and
chill for serving later. |
