Cranberry- Apple Relish
 

Cranberry- Apple Relish

 

Use to accompany roast of pork or turkey...
 

1 large 

 

orange

 

2 cups 

 

fresh cranberries

 

1 cup 

 

granulated sugar

 

2 large 

 

red delicious apples

Grate orange peel on coarse grater to make long shreds. Peel orange and cut into ½" cubes, discarding white pith.

Wash and drain cranberries; remove any stems. Chop cranberries very coarsely (or run through a food grinder or processor).

Combine grated peel, chopped orange, cranberries and sugar; mix well. Refrigerate until well chilled, several hours.

Wash and core apples, but do not pare. Wrap and refrigerate.

When ready to serve, chop apples coarsely and toss lightly with cranberry mixture just to combine.

 

Servings: 8
