 Almond- Coconut Bars

 

Delicious almond flavor mixed with flaky coconut...
 

1 cup 

 

flour

 

1 tsp 

 

baking powder

 

¼ tsp 

 

salt

 

¼ cup 

 

butter

 

1 cup 

 

firmly packed brown sugar

 

1 large 

 

egg

 

1 tsp 

 

almond extract

 

1 cup 

 

shredded coconut

Preheat oven to 350 degrees F. Spray 8x8" baking pan with nonstick cooking spray.

Combine flour, baking powder and salt; set aside.

Melt butter in large saucepan. Stir in brown sugar. Lightly beat in egg and almond extract. Mix coconut with dry ingredients and gradually add to hot mixture.

Spread in pan and bake 35 minutes, or until browned. Let cool for 10 minutes in the pan; remove from pan and cool on wire rack. Cut into 24 bars.

 

Yield: 24 bars

 

 Cooking Tips

*If you're not a fan of coconut, simply make these "almond bars" by substituting sliced almonds for the coconut.
