 Apricot- Raisin Bars

 

Delicious, healthy, fruity snack...
 

 

 

FILLING:

 

½ cup 

 

dried apricots, chopped finely

 

¼ cup 

 

raisins

 

½ cup 

 

apples, peeled and grated

 

½ cup 

 

reduced- sugar apricot preserves
 

 

 

 

CRUST:

 

1½ tsp 

 

baking soda

 

1 cup 

 

flour

 

½ cup 

 

oat bran

 

2 cups 

 

rolled oats

 

1 tsp 

 

ground cinnamon

 

1 cup 

 

brown sugar, packed

 

¾ cup 

 

butter, melted

Preheat oven to 325 degrees F. Spray 9x13" pan with nonstick spray.

In a medium bowl, combine all filling ingredients. Stir well.

Prepare crust: In a large bowl, combine dry ingredients. Stir in melted butter. Press slightly more than half of crust mixture in bottom on prepared pan. Spread on filling. Sprinkle on remaining crust mixture.

Bake for 20 minutes. Let cool slightly and cut into bars.

 

Yield: 24 bars
