 Caramel Squares

 

Bet you can't eat just one...
 

2 cups 

 

brown sugar, packed

 

½ cup 

 

melted butter

 

2 large 

 

eggs

 

2 tsp 

 

baking powder

 

2 tsp 

 

vanilla

 

1 cup 

 

pecan pieces

 

1 ½ cups 

 

flour
 

 

 

 

FROSTING

 

1 cup 

 

brown sugar

 

½ cup 

 

light whipping cream

 

2 Tbs 

 

butter

 

1 tsp 

 

vanilla extract

 

1 lb 

 

powdered sugar

Preheat oven to 350 degrees F. Spray 12x15" pan with nonstick spray.

In large bowl, mix together 2 cups of brown sugar, butter, eggs, baking powder, vanilla, pecans and flour. Spread into pan.

Bake 20 minutes (should be still soft). Remove from oven and cool slightly before covering with frosting.

To prepare frosting, combine 1 cup of brown sugar, light cream and butter in a saucepan and bring to a hard boil for 1 minute. Add vanilla and stir in enough powdered sugar until the mixture is spreadable (approx. 1 lb).

*You may double the frosting recipe if you desire more frosting.
