 Cheesecake Squares

 

Delicious little cheesecake bites...
 

 

 

CRUST:

 

1/3 cup 

 

butter, softened

 

1/3 cup 

 

packed brown sugar

 

1 cup 

 

flour

 

½ cup 

 

finely ground walnuts
 

 

 

 

FILLING:

 

¼ cup 

 

granulated sugar

 

1 large 

 

egg

 

2 Tbs 

 

milk

 

1 Tbs 

 

fresh lemon juice

 

½ tsp 

 

vanilla extract

 

8 oz 

 

cream cheese, at room temperature

Preheat oven to 350 degrees F.

To prepare crust: cream butter and sugar. Add flour and walnuts. Blend to make a mixture of coarse crumbs.
Reserve ½ cup for topping. Press mixture into greased square pyrex pan. Bake 10-12 minutes until browned.

Place all filling ingredients into large bowl. Blend until well mixed. Pour over hot crust. Sprinkle with the reserved crumbs. Bake for 25 minutes.

Remove from oven, cool, and cut before refrigerating.

 

 
Cooking Tips:
*A food processor is perfect for preparing finely ground walnuts.
