Cranberry - Macadamia Bars

 

 

Cranberry and macadamia nuts are a fabulous mix...
 

1¼ cups 

 

flour

 

¾ cup 

 

granulated sugar

 

½ cup 

 

butter

 

½ cup 

 

finely chopped macadamia nuts, hazelnuts or pecans

 

2 large 

 

eggs, beaten

 

1¼ cups 

 

granulated sugar

 

2 Tbs 

 

milk

 

1 tsp 

 

finely shredded orange peel

 

1 tsp 

 

vanilla extract

 

½ cup 

 

finely chopped cranberries

 

½ cup 

 

shredded coconut

Stir together flour and ¾ cup sugar in mixing bowl. Cut in butter with pastry blender till mixture resembles coarse crumbs. Stir in ½ cup nuts. Press flour mixture into the bottom of an ungreased 9x13" baking pan. Bake in 350° oven for 10-15 minutes or till the crust is lightly browned around the edges.

Meanwhile, combine eggs, the 1¼ cups sugar, milk, orange peel and vanilla in a mixing bowl. Beat till combined. Pour over hot crust. Sprinkle with ½ cup nuts, cranberries and coconut.

Bake in 350° oven for 30 minutes more or till golden. Cool slightly in pan on wire rack. Cut into bars while warm. Cool completely in pan.

 

Yield: 24 bars
