 Royal Chocolate-Marshmallow Bars

 

Great layers and rich in flavor...
 

 

 

1ST LAYER:

 

¾ cup 

 

butter, softened

 

1 ½ cups 

 

granulated sugar

 

3 large 

 

eggs

 

1 tsp 

 

vanilla extract

 

1 1/3 cups 

 

flour

 

½ tsp 

 

baking powder

 

½ tsp 

 

salt

 

3 Tbs 

 

unsweetened cocoa
 

 

 

 

2ND LAYER:

 

4 cups 

 

miniature marshmallows
 

 

 

 

TOPPING:

 

8 oz 

 

milk chocolate chips

 

3 Tbs 

 

butter

 

1 cup 

 

peanut butter

 

2 cups 

 

Rice Krispies

Preheat oven to 350 degrees F. Grease jelly roll pan.

In a large mixing bowl, cream butter and sugar. Add eggs and vanilla; beat with electric mixer until light and fluffy.

Combine flour, baking powder, salt and cocoa, and add to butter mixture.

Spread in prepared pan, and bake 15-18 minutes.

Sprinkle marshmallows evenly over first layer and return to the oven for 2-3 minutes. Using a knife dipped in water, spread melted marshmallows evenly over the first layer. Let cool.

For the topping, combine chips, butter and peanut butter in a small saucepan. Cook over low heat, stirring occasionally, until melted and well-blended. Remove from heat and stir in Rice Krispies. Spread evenly over bars.

Chill until firm, and cut into bars.

 

Yield: 3 dozen
