 Sunburst Lemon Bars

 

Tart and delicious...
 

 

 

CRUST:

 

2 cups 

 

flour

 

½ cup 

 

powdered sugar

 

1 cup 

 

butter, softened
 

 

 

 

FILLING:

 

4 large 

 

eggs, slightly beaten

 

2 cups 

 

granulated sugar

 

¼ cup 

 

flour

 

1 tsp 

 

baking powder

 

¼ cup 

 

fresh lemon juice
 

 

 

 

GLAZE:

 

1 cup 

 

powdered sugar, sifted

 

2-3 Tbs 

 

fresh lemon juice

Preheat oven to 350 degrees F.

In large bowl, combine crust ingredients and mix at low speed until crumbly. Press mixture evenly in bottom of ungreased 13x9" pan. Bake 20-30 min., or until lightly browned.

In large bowl, combine filling ingredients. Pour over crust. Bake 25-30 min., until top is light golden brown. Let cool.

In small bowl, combine powdered sugar and enough lemon juice for desired glazed consistency. Blend until smooth. Drizzle over cooled bars.

Cut into bars when glaze is set.

 

Yield: 36 bars
