shortening |
|

brown sugar, packed |
|

white sugar |
|
|

|
eggs, well beaten |

vanilla extract |
|

flour |

salt |

baking soda |

cinnamon |

oatmeal (do not use instant) |

chopped walnuts (optional) |

Preheat oven
to 350 degrees F. |

Cream
shortening and sugars. Add eggs and vanilla and
beat well. Set aside. |

Sift flour,
salt, baking soda and cinnamon. Add to first
mixture and mix well. Add nuts and raisins, if
desired. Add oats last. |

Spoon out by
rounded teaspoonfuls onto greased cookie sheets.
Bake for 10 minutes. Remove to a wire rack and
cool completely. |

*If you'd like to
add raisins to your oatmeal cookies, use 1 cup of
raisins and reduce nuts to 1/2 cup.
