 Apple Cake

 

No cholesterol and low sugar...
 

2/3 cup 

 

granulated sugar

 

½ cup 

 

brown sugar

 

¼ cup 

 

vegetable oil

 

3 large 

 

egg whites

 

2/3 cup 

 

flour

 

2/3 cup 

 

whole-grain flour

 

½ cup 

 

oat bran

 

1 ½ tsp 

 

baking soda

 

1 tsp 

 

cinnamon

 

¼ tsp 

 

allspice or nutmeg

 

3 cups 

 

shredded, unpeeled apples

 

 

 

powdered sugar

Preheat oven to 350 degrees F. Spray 13x9" pyrex pan with nonstick coating. Set aside.

In large mixing bowl, combine sugars, oil and egg whites. Beat with a wooden spoon until well blended. Add flours, oat bran, baking soda, and spices. Stir just until moistened. Stir in shredded apples.

Pour batter into prepared pan. Bake 25-30 minutes. Cool. If desired, sift powdered sugar on top of cake. Cut into small squares to serve.
