Apple bread
pudding baked into a pie!

bread, cut into pieces (about 3 cups) |

apples (Jonathon or Rome), peeled,
cored, sliced

chopped nuts (walnuts, pecans or

Preheat oven
to 450 degrees F. |

To make
crust: line unbaked shell with extra-thick foil.
Bake for 8 minutes. Remove foil and bake for an
additional 4 minutes. Remove from oven and
reduce oven temperature to 350. |

To make
filling: In medium bowl, stir together eggs,
applesauce, yogurt, sugar, brown sugar, oats and
cinnamon. Stir in bread and apples. Set aside. |

To make
topping: In separate bowl, stir together brown
sugar and flour. Cut in butter with pastry
blender until the mixture resembles coarse
crumbs. Stir in nuts. |

Pour filling
into prepared pie crust. Sprinkle topping over
filling. Cover edge of crust with foil to
prevent burning. Bake for 30 minutes. Remove
foil and bake about 30 minutes more until top is
golden and fruit is tender. |
