 Carrot Cake

 

Great cake - great frosting...
 

 

 

CAKE:

 

2 cups 

 

flour

 

2 cups 

 

granulated sugar

 

2 tsp 

 

baking powder

 

2 tsp 

 

baking soda

 

2/3 tsp 

 

ground cinnamon

 

1 tsp 

 

salt

 

4 large 

 

eggs

 

1½ cups 

 

vegetable oil

 

3 cups 

 

grated carrots

 

½ cup 

 

chopped nuts (optional)
 

 

 

 

FROSTING:

 

8 oz 

 

package cream cheese, softened

 

½ stick 

 

butter, softened

 

1 box 

 

powdered sugar

Preheat oven to 300 degrees F. Grease and flour three 9" round cake pans.

Mix together all dry ingredients and set aside.

In large bowl, beat eggs and add oil. Gradually add dry ingredients to wet mixture. Add carrots and nuts.

Pour batter into prepared pans. Bake 45 minutes, or until toothpick inserted in center comes out clean. Let cool completely before frosting.

To prepare frosting: Cream together cream cheese and butter. Add sugar and beat well. Frost lightly between layers and then ice sides and top.
