 Classic Cheesecake

 

A nice, simple recipe for an old classic...
 

 

 

CRUST:

 

1/3 cup 

 

butter, softened

 

1/3 cup 

 

granulated sugar

 

1 large 

 

egg

 

1 ¼ cups 

 

flour
 

 

 

 

FILLING:

 

Two 8oz. 

 

packages cream cheese, softened

 

½ cup 

 

granulated sugar

 

1 Tbs 

 

fresh lemon juice

 

1 tsp 

 

grated fresh lemon peel

 

½ tsp 

 

vanilla extract

 

3 large 

 

eggs
 

 

 

 

TOPPING:

 

1 cup 

 

sour cream

 

1 Tbs 

 

granulated sugar

 

1 tsp 

 

vanilla extract

Preheat oven to 450 degrees F.

Beat butter and 1/3 cup sugar until light and fluffy; blend in 1 egg. Add flour and mix well.

Spread dough on bottom and 1 ½" up the sides of a 9" springform pan. Bake 5 minutes.

Beat cream cheese, ½ cup sugar, peel and vanilla in a large mixing bowl at medium speed until well-blended. Add 3 eggs, one at a time, mixing well after each addition. Pour into crust. Bake for 50 minutes.

Stir together topping ingredients and spread evenly over cake; continue baking 10 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill for a few hours.

Serve with berries.
