Cranberry Sauce Cake

 

A delightful seasonal cake...
 

3 cups 

 

flour

 

1½ cups 

 

granulated sugar

 

1 cup 

 

mayonnaise

 

16 oz 

 

can whole berry cranberry sauce

 

1/3 cup 

 

orange juice

 

1 Tbs 

 

grated orange peel

 

1 tsp 

 

baking soda

 

1 tsp 

 

salt

 

1 tsp 

 

orange extract

 

1 cup 

 

chopped walnuts

 

 

 

Icing:

 

1 cup 

 

powdered sugar

 

1 to 2 Tbs 

 

orange juice

Preheat oven to 350° F. Cut wax paper or parchment paper to fit bottom of 10" tube pan. Spray pan and paper.

In a large bowl, mix all ingredients. Add nuts last. Pour batter into prepared pan.

Bake 60-70 minutes. Cool in pan for 10 minutes, then remove and cool.

Drizzle icing over cake.

 Cooking Tips

*Add orange extract to icing for more orange flavor.
