Lime- Coconut Buttermilk Pie

 

 

A key-lime flavor...
 

1½ cups 

 

granulated sugar

 

¾ cup 

 

sweetened shredded coconut

 

½ cup 

 

buttermilk

 

½ cup 

 

unsweetened coconut milk

 

1 Tbs 

 

flour

 

2 large 

 

eggs

 

2 large 

 

egg yolks

 

½ tsp 

 

vanilla extract

 

 

 

minced zest and juice of 1 lime

 

pinch of 

 

salt

 

One 9-inch 

 

unbaked pie shell

Preheat oven to 350°F.

In a large bowl, whisk together all ingredients (except pie shell) until blended.

Pour into pie shell and place on a baking sheet. Bake until filling is just set, yet still a bit jiggly, 40 to 50 minutes. Remove from oven and cool to room temperature; chill if not serving right away. (Let chilled pie stand at room temperature for 15 minutes before serving).

 

Yield: One 9-inch pie

Tips:  
*Serve with a dollop of whipped cream and a small lime slice.
