 Lowfat Cheesecake

 

Yummy lowfat version of the classic...
 

 

 

CRUST:

 

1 cup 

 

graham cracker crumbs

 

3 Tbs 

 

granulated sugar

 

3 Tbs 

 

light margarine, melted
 

 

 

 

FILLING:

 

16 oz 

 

nonfat cottage cheese

 

2 8oz. 

 

packages light cream cheese, softened

 

½ cup 

 

granulated sugar

 

¼ cup 

 

flour

 

1 tsp 

 

vanilla extract

 

3 large 

 

eggs
 

 

 

 

TOPPING:

 

1 cup 

 

strawberry halves

Preheat oven to 325 degrees F.

Stir crumbs, sugar and margarine until well-blended; press onto bottom of 9" springform pan. Bake 10 minutes.

Increase oven temperature to 450 degrees F. Mix cottage cheese and cream cheese at medium speed on electric mixer until well blended. Blend in sugar, flour and vanilla. Add eggs, one at a time, mixing well after each addition. Pour over crust. Bake 15 minutes; reduce heat to 250 degrees F; continue baking 1 hour. Loosen from rim of pan; cool before removing rim of pan.

Top with strawberry halves.
