 Rich Pumpkin Pie

 

A spicy custard-like pumpkin pie...
 

One 9"      unbaked pie shell

3 large 

 

eggs, slightly beaten

 

1 cup 

 

evaporated milk

 

1 cup 

 

granulated sugar

 

1 cup 

 

unsweetened canned pumpkin

 

1/8 tsp 

 

salt

 

1 stick 

 

butter, melted

 

½ tsp 

 

ground cinnamon

 

½ tsp 

 

ground nutmeg

 

½ tsp 

 

ground allspice

 

½ pint 

 

heavy whipping cream

Preheat oven to 400 degrees F. Place pie crust into 9" pie pan and crimp edges.

In large bowl, cream eggs, milk and sugar. Add remaining ingredients (except cream) and mix together well. Pour into pie shell and bake for 40 minutes, or until knife inserted into the middle comes out clean. Let cool.

Whip cream and spread over the cooled pie.
