you can find some juicy, fresh peaches...

sliced fresh peaches |

water |

granulated sugar |

cornstarch |

fresh lemon juice |

baked pie shell |

whipped cream for topping |

extra fresh peach slices |

Mash 1 cup
of the peaches and place in medium saucepan. Add
water, bring to a boil and cook for 4 minutes.
Pour through fine mesh strainer to save liquid
and discard peach meat. Pour liquid back
into saucepan. |

Mix sugar
and cornstarch; add to the peach liquid. Cook
until thick and clear. Add lemon juice, butter
and salt. Remove from heat and let cool. |

Arrange
remaining peaches in the baked shell. Pour
cooled glaze over the fruit. Chill in
refrigerator. |

When ready
to serve, top with whipped cream and a few fresh
peach slices.
