Vanilla Pound Cake

 

Fabulous vanilla flavor...
 

2 cups 

 

granulated sugar

 

¾ cup 

 

(1½ sticks) butter, softened

 

4 large 

 

egg whites

 

2 large 

 

eggs

 

1½ Tbs 

 

vanilla paste or 1½ Tablespoons vanilla extract

 

3 cups 

 

flour

 

1½ tsp. 

 

baking powder

 

½ tsp 

 

salt

 

1 cup 

 

nonfat buttermilk

 

 

 

assorted fresh fruit for garnish

Preheat oven to 350°F. Coat a 10-inch tube pan with cooking spray. Set aside.

Beat sugar and butter at medium speed of mixer until well- blended, about 4 minutes. Add egg whites and eggs, one at a time, beating well after each addition. Beat in vanilla.

Combine flour, baking powder and salt in a bowl, and whisk to blend. Add flour mixture to sugar mixture alternately with buttermilk, beginning and ending with flour mixture. Pour batter into prepared pan; bake around 50 minutes, or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan and cool, upright, on a wire rack.

Slice pound cake and serve with fresh fruit.
