Candied Orange, Lemon and Grapefruit Peel

 

These are a fun little treat to have on a dessert tray...

Remove pulp from fruit so that you just have peel remaining. Soak orange and lemon peel overnight in cold water. If using grapefruit rind, soak it in salted water overnight (1 T. salt w/ 1 quart water).

The next morning, drain peel. Place peel in saucepan and cover with fresh water. Lemon and grapefruit peel may be placed together. and should be brought to a boil three times in cold water, discarding the old water each time after boiling for 30 minutes. The orange peel needs only one change of water and must be brought to boil twice for 30 minutes. Rind should be tender in the end. Drain thoroughly.

Measure ½ cup rind, ½ cup granulated sugar and ½ cup water. Keep measuring equal quantities until you run out of rind. Mix together and let stand overnight. The next morning, bring to a boil and cook until clear. Spread out to dry, first rolling each piece well in granulated sugar.

Let cool and they are ready to serve.
