 Blueberry Buckle

 

Fresh blueberries with a great combination of flavors...
 

2 cups 

 

fresh blueberries, washed and stemmed

 

1 Tbs 

 

fresh lemon juice

 

2 cups 

 

sifted flour

 

2 tsp 

 

baking powder

 

dash 

 

of salt

 

¼ cup 

 

butter, softened

 

2/3 cup 

 

granulated sugar

 

1 large 

 

egg, beaten

 

¼ tsp 

 

vanilla extract

 

½ cup 

 

milk
 

 

 

 

TOPPING:

 

½ cup 

 

brown sugar, packed

 

1/3 cup 

 

flour

 

½ tsp 

 

ground cinnamon

 

dash 

 

of nutmeg

 

½ stick 

 

butter, melted

Place prepared blueberries in a bowl and sprinkle with lemon juice. Set aside.

Preheat oven to 375 degrees F.

In a mixing bowl, sift together flour, baking powder, and salt. Set aside.

In a separate bowl, cream butter and sugar. Blend in beaten egg, vanilla and milk. Stir dry ingredients into liquid until well blended. Fold in berries.

Pour batter into greased, floured 9x9" baking dish.

Combine topping ingredients brown sugar, flour, cinnamon and nutmeg. Sprinkle onto batter. Drizzle with butter.

Bake 30-35 minutes.
