 Sweet Bananas with Rum Syrup

 

Terrifically sweet and flavorful...
 

1 stick 

 

butter

 

1 cup 

 

granulated sugar

 

¼ cup 

 

water

 

¼ cup 

 

rum

 

1 Tbs 

 

fresh lemon juice

 

 

 

grated rind of 1 lemon

 

1 tsp 

 

vanilla extract

 

6 small 

 

bananas (not over-ripe)

In a heavy skillet, melt butter; then add sugar and water. Cook until it has reduced to a heavy syrup. Add rum, lemon juice, rind and vanilla.

Peel and half bananas lengthwise. Place in hot syrup and cover.

Serve warm.
