version of the old standard...

fresh cranberries |

water |

raisins |

orange juice |
|

granulated sugar |
|
|

flour |

eggs, beaten |

canola oil |

whipped cream (optional) |

In a large
saucepan, simmer cranberries in water until they
pop. Add raisins, juice, and sugar; mix well.
Boil until thickened. Remove from heat and let
cool. |

Mix in flour
and eggs |

Heat oil in
large skillet. Drop batter by Tablespoonfuls
into heated oil and fry until latkes are brown
on both sides. |

Serve with
whipped cream on top, if desired. |
