cream

Slice meat
very thinly in diagonal slices across the grain.
Sprinkle with lemon juice and set aside.

Sauté onion
in butter; add meat, lemon juice, flour, and
seasonings. Cook and stir for several minutes.
The meat should remain a bit pink. Stir in sour
cream and brandy. Adjust seasonings to taste and
stir in chives.
