cream cheese, softened |

Dijon mustard |

and pepper to taste |

Cook
macaroni using package directions; drain. |

Preheat oven
to 400 degrees F. Spray 2 ½ quart baking dish
with cooking spray. |

Melt butter
in a large saucepan over medium heat. Stir in
the flour. Cook until smooth and bubbly,
stirring constantly. Stir in milk, cream cheese,
Dijon mustard, salt and pepper. Cook for 3
minutes or until thickened, stirring constantly.
Stir in macaroni and cheddar cheese. |

Spoon into
prepared baking dish and sprinkle with parsley.
Bake 20 minutes, or until golden brown. |
