 Curried Pork Chops

 

Tender pork in a curry sauce...
 

4 1" thick 

 

pork chops

 

3 Tbs 

 

vegetable oil

 

½ medium 

 

onion, chopped

 

2 Tbs 

 

flour

 

2 Tbs 

 

curry powder

 

1½ cups 

 

beef broth

 

½ red bell 

 

pepper, seeded and cut into strips

 

1 Tbs 

 

apricot jam

 

3 medium 

 

tomatoes, skinned and cut into wedges

 

pinch of 

 

salt

 

2 Tbs 

 

tomato paste

In a large, heavy skillet fry pork chops in oil until browned on both sides. Remove chops, then add onion, flour, and curry powder to the pan. Fry for 1 minute and then add beef broth. Stir and add pepper, jam, tomatoes, salt and tomato paste and bring to a boil. Lower the heat and place chops back into the pan.

Cover and simmer gently for about 1 hour, until chops are tender. Remove pork chops and arrange on a warmed serving dish. Drizzle sauce on top of the chops.
