 Slow Cooker Pork Barbecue

 

Tasty pork- makes great leftovers for sandwiches too...
 

5 lbs 

 

bone-in pork loin roast

 

1 medium 

 

onion, sliced and separated into rings

 

1 to 2 cloves 

 

garlic, sliced thinly

 

3 to 4 whole 

 

garlic cloves

 

2 cups 

 

sauce (see below)

 

1 tsp 

 

fresh lemon juice

 

2 Tbs 

 

red wine vinegar

 

 

 

tabasco sauce to taste
 

 

 

 

SAUCE:

 

¼ cup 

 

packed brown sugar

 

¼ cup 

 

cider vinegar

 

¼ cup 

 

worcestershire sauce

 

1 cup 

 

ketchup

 

2 cups 

 

water

 

1 tsp 

 

dry mustard

 

1 tsp 

 

chili powder

 

 

 

tabasco sauce to taste

 

 

 

salt to taste

Place pork in a slow cooker. Top with onion and garlic. Cook on high for 5 hours, or until pork pulls apart easily. Remove to a platter to cool. Once cooled, pull pork apart and place in a large skillet (or Dutch oven).

Prepare sauce: Combine all sauce ingredients in saucepan. Bring to a boil over medium heat. Remove from heat.

Add 2 cups of the sauce to the pork. Stir in lemon juice, vinegar and tabasco. Cook over medium heat until bubbly.

 Cooking Tips

*The leftover sauce is great with chicken as well.
