Serve with a side of sweet potatoes...
 

6 2" thick 

 

rib bone-in pork chops

 

1 tsp 

 

salt

 

1/8 tsp 

 

pepper

 

3 Tbs 

 

butter

 

5 Tbs 

 

chopped onion

 

1½ cups 

 

dried breadcrumbs

 

1 large 

 

green apple, cored, peeled and sliced

 

5 Tbs 

 

seedless raisins

 

½ tsp 

 

ground nutmeg

 

¼ tsp 

 

ground cinnamon

 

2-3 Tbs 

 

water

Preheat oven to 350 degrees F.

Split chops through the middle from the outer edge toward the bone, leaving meat attached to the bone. Open like a book and pound both sides thin with a mallet.

Season the chops with ½ of the salt and the pepper.

Sauté the onion and breadcrumbs in butter in a heavy skillet. Add remaining ingredients and mix together well. Spread the mixture in even portions on the chops. Fold over and fasten closed with toothpicks.

Bake for 45 minute to 1 hour, or until tender. Turn once during baking time and drain off excess fat.
