POACHED ORANGES: |

granulated sugar |

orange flavored liqueur, to taste |

Preheat oven
to 350 degrees F. |
|

Place pork
on a rack in a shallow roasting pan. Sprinkle
with a little salt, freshly ground pepper and a
pinch of rosemary. Roast for 2 - 2½ hours, or
until tender. Combine soy sauce, ketchup, honey
and garlic and use to baste meat often during
roasting period. |

While meat
is roasting, prepare poached oranges: Peel the
rind and white membranes from the oranges. Slice
enough of the orange rind to make about 3 T. of
slivers. Combine slivers with sugar and water in
a medium saucepan. Cook over medium heat,
without stirring, for about 8 minutes or until
slightly thickened. Place oranges in the syrup;
cook over very low heat, basting constantly, for
about 5 minutes, or until they are warm but
still firm. Remove from heat and add liqueur.
Chill, basting occasionally with the syrup.
Serve cold as a garnish for the pork. |
