 Baked Lime Chicken

 

Lime, butter and brown sugar blend nicely for a great flavor...
 

2-4 large 

 

limes

 

3 ½ lbs 

 

boneless chicken breasts

 

3 Tbs 

 

butter, melted

 

¼ cup 

 

flour

 

1 ¼ tsp 

 

salt

 

½ tsp 

 

pepper

 

2 Tbs 

 

brown sugar

 

14 oz 

 

can chicken broth

 

1 Tbs 

 

grated lime peel

Preheat oven to 400 degrees F. Spray 9x13" roasting pan with nonstick spray.

Grate lime peel. Squeeze 2 Tablespoons lime juice and toss juice with chicken.

Mix flour, salt and pepper. Dip chicken in flour and then dip in butter. Arrange chicken in pan.

Mix lime peel and brown sugar. and sprinkle over chicken. Pour broth and remaining lime juice into the pan and bake, uncovered, for 50 minutes. Baste breasts occasionally with juices in pan. If needed, use ½ can of broth with lime juice added for basting.

Serve immediately.
